Julie Barefoot Cookies
I was looking for something sweet to eat for our beachy Christmas/Kalikimaka this year and I got the idea to just buy ready made cookie mixes and add some extras to make it a bit more ‘beachy’.
So in addition to the cookie ingredients I wanted to make them look as nice as possible by showcasing them with some of my shells, coral and finger sponges.
I originally called them my ‘black and white cookies’ because I had added some white chocolate chips to the batter, as well as some chopped macadamia nuts..
On the cutting board are some macadamia nuts to the left, and some white chocolate chips to the right.
I just wanted to jazz up some simple chocolate chip cookies.
There is nothing wrong with enhancing something and making it more to your own personal tastes.
It was while I was baking the cookies that it dawned on me to add the chocolate feet that I had brought with me. I had originally planned on using them elsewhere when I realized how great they would look on top of the cookies. So when you remove the cookies from the oven place the feet on them immediately so that they sort of melt into each cookie.
I like keeping a few of the cookies plain with no foot on them.

How I made the cheesecake above, was to just make a ready made no back cheesecake, then refrigerate, then top with some graham cracker crumbs, to represent the sandy beach, then I added the chocolate feet walking along the sand, and some chocolate sea shells, along with some palm trees and even some beach toys. I also used a beach towel as a table cloth.

I wanted to honor my Grandmother by baking her world famous Angel Food Cake. Whenever I would come and visit her she always made one for me. Maybe it is a ‘southern thing’, but I adore Angel Food cake because of her. So I decided to recreate that memory on Grandparents Day.
A Lovely Dessert with Punch
Below is my Grandmother’s Sunbeam Mixer and her two Angel Food cake pans that I inherited from her. I love to use them and when I do I always think about her.
Her secret Angel Food Cake recipe? Betty Crocker. 🙂 Just follow the package instructions.
I cannot tell you the memories that just making this cake invokes. As you can see I am using two different Angel Food cake pans.
Make sure to take out the top rack in your oven and place the cakes on the bottom rack, at the bottom of your oven.
After they are done.
Once they are taken out of the oven then place them on a bottle, upside down while they cool. Just seeing this funny scene reminds me of my childhood of seeing my Grandmother doing this in her kitchen.

Sea Foam Frosting
Below left, my recipe card holder that my son Brodie made for me in Boy Scout’s when Gordon was his troop leader. I love the pineapple print decoupaged onto it. I have it sitting on one of my many shell trivets. To the right, the ingredients for our Sea Foam Frosting.
Sea Foam Frosting Recipe
(Recipe from my 8th. grade Home Ec class at James Madison Junior High in Roanoke, Virginia). Told you I saved everything. 🙂
2 egg whites
1 1/2 cups brown sugar (we use Splenda brown sugar)
1/4 teaspoon cream of tarter
1/3 cup cold water
dash salt
1 teaspoon vanilla
green food coloring (optional)
Place all ingredients except vanilla in top of double boiler, (do not place over water). Beat 1/2 minute at low speed on electric mixer. Place over but not touching boiling water. Cook, while beating constantly to stiff peaks, about 7 minutes, (do not overcook). Remove from water. Beat in vanilla.
It can be a bit gooey but once it has set then it becomes this “foam” consistency.

I forgot my parchment paper so I used aluminum foil underneath the cake so that it wouldn’t mess up my cake plate.
Most everything here belonged to my Grandmother. The vintage tablecloth, the platter the cake is on, the pretty tropical dessert plates with the palm leaves on them. The vintage silverware, the cloth napkins that I put inside a large seashell to hold them.
Also all the pearl necklaces were hers as well.
Sea shells, vintage faux pearls , punch, and frosting………………………………. Yum.
I placed seashells all around the cake. I wouldn’t use shells that you find on the beach. The ones that I used I purchased and they are very clean. I also washed them a few times before I used them here.
I used a large abalone shell to hold my punch ladle.
To the right my vintage Hawaiian leaf lunch plates and punch glasses that I love and use regularly when I am at home.

Sea Shell Chocolates
White and dark chocolates!
We had the leftover chocolate from Christmas that we didn’t use so we decided to make some chocolates for Valentines Day.
This is my dutch oven. It once belonged to my grandmother. When I got married I asked her if I could take it with me. It’s one of those green vintage dutch ovens from the 1970’s. I love it!
The chocolate that we used was not the best grade chocolate for this project but it worked anyway and it tastes great!

Gordon just melted the chocolate on top of the stove and then placed the melted chocolate into the molds. Scraped off the excess, then we put them into the refrigerator to harden overnight.

Using the same process as above.
We then placed them on some vintage glass luncheon plates to start our assembly. They will be Valentine gifts.
I pulled out all my sprinkles from the cabinet. Some white pearls, golden glitter, and red chunks of sugar. Also some raw cane sugar from Maui. I think it looks like sand and will be perfect for this.
I’m also using some cellophane bags and some nautical nylon white rope as a tie.
Here I am placing two of the scallop shells together by putting some chocolate on the inside to act as a glue.
Just add your “sugar sand” to the bottom of the bag, then your “shells” and tie off with a square knot.
Perfect gift!
A vintage Hawaiian serving tray will hold the shell chocolates that will be delivered to friends. I even added some of the chocolates to a bowl of real shells. Can’t tell the difference.
If you don’t have the time or patience to make your own seashell chocolates you can always buy them already made. These are Belgium chocolates. I especially love the ones shaped like shrimp. Placed on a vintage tropical palm and floral plate they look very nice.
